Vegan Mushroom Bourguignon

  • 1/4 cup chopped fresh parsley


  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the onions and carrots, and cook until they begin to soften, about 5 minutes.
  2. Add the garlic and cook for an additional minute until fragrant.

  6. Season with salt and pepper to taste.
  7. In a small bowl, whisk together the flour and 1/4 cup of water until smooth. Add the mixture to the pot and stir well. Simmer for an additional 5-10 minutes, or until the sauce has thickened.
  8. Remove the bay leaves and discard them.
  9. Serve the Mushroom Bourguignon hot, garnished with fresh parsley.
