  • 1 medium spaghetti squash
  • 1 tablespoon olive oil

  • 1 red bell pepper, chopped
  • 1 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves on a baking sheet, cut side down, and roast for 40-45 minutes, or until the squash is tender and can be easily pierced with a fork.
